Sausage, Lentil, and Kale Soup

Mm-MM! I just had a big bowl of this for dinner and thought it was delightful. Neither girl tried it, of course, being a combo of many dreaded things for them (greens... soup... lentils...), so they had something else for dinner. But hey, maybe your kids are more tolerant of new things than mine are! This is certainly something to please the adults in the house, at least!

I added a bunch of spinach that was on the verge of getting too wilted for me to care to eat, and I threw in the beet stalks that were left over from dinner the other night. Perhaps because of all this, I had to add a few extra cups of water with the kale. This soup had so much more flavor than I expected it to (I know that sounds bad, but...) - I am normally not a fan of kale, but it was just right to stand up to the sausage in this.

i'm cold and hungry right now and wish i was eating your soup. love the sausage and kale pairing. i need to back into the greens kick. i understand the soup woes your girls are having. big boo would cry when i served soup a year ago. now he eats almost every kind i make. little boo used to gag when he took bites (cold soup is pretty unappetizing and he. eats. slow.) he doesn't gag now, and only eats a few bites, but still it's progress. in 2011 he'll be a soup lover like the rest of us.

i always serve cheesy toast or pesto crostini on soup night. that seems to mitigate the complaints, and boys have to eat a few soup bites before taking a second helping of toast.

keep trying! i'm certain that by the time they are in college, they'll come home and ENJOY at least a few of the soups they grew up being served by you :)

Jenna, hearing about your soup progress with your boos gives me hope! I think adding in a cheesy toast is a great idea - thanks!
