Sweet Potato-Parsnip Mash
3 large sweet potatoes, peeled and diced into chunks
3-4 large parsnips (aiming to have about half as much parsnip as sweet potato), peeled and diced into chunks
1/3 cup apple juice (or cider, when in season)
salt & pepper
Fill a large pot with about 1 inch of water. Add in diced sweet potatoes and parsnips. Bring water to a boil, and then simmer the vegetables for about 15 minutes, until very tender. Drain the vegetables and return to the pot. Add the apple juice and mash well. Add salt and pepper to taste.

I love parsnips! They are so under-utilized. This sounds really good!
We love sweet potatoes in my home but I'm not familiar with parsnips. What do they taste like? Are they sweet too? Obviously I need to try them!
They are sweet, but not in the same straightforward sweet way of a sweet potato. I like them, but I find them too strong on their own - they have a really unique taste - so I think mashing them in with sweet potatoes worked perfectly. They look like white carrots and in my grocery store are sold next to the carrots. My baby Lizzy ADORES them for some reason - I bake them until they're soft and she gobbles them down!
